Dinner Delights - Homemade Tangy Pickle

Winter is the time for delectable and easy to make pickles. Spend a couple of hours this weekend making a pickle the entire family will enjoy. You will relish the wonderful zesty flavour it has to offer.

    Ingredients:

  •     1/2 kg medium size red carrots
  •     1/2 kg medium size cauliflower (without the stalk)
  •     10 medium green chillies
  •     15 small cloves of garlic
  •     1 medium sized ginger
  •     2 teaspoons of coarsely ground mustard
  •     1 teaspoon coarsely ground fenugreek
  •     2 teaspoons red chilli powder
  •     1 teaspoon turmeric
  •     2 heaped teaspoons salt
  •     2 heaped teaspoons sugar
  •     2 cups synthetic white vinegar

    Instructions:

  1. Peel the carrots and slice small strips.
  2. Make small pieces of cauliflower.
  3. Scrape the skin of the ginger and slice.
  4. Use whole chillies and peeled garlic cloves.
  5. Wash all vegetables thoroughly in warm water and spread evenly to dry on a brown paper or a tea towel on a tray in open air (but away from the sun) for approximately 12 to 14 hours.
  6. Mix the mustard, fenugreek, chilli powder, turmeric, salt and sugar in a large basin or mixing bowl.
  7. Add the dried garlic, carrots, cauliflower, chillies and ginger to the spice combination. Use a wooden spoon to thoroughly mix the spices and vegetables together.
  8. Divide all ingredients equally into two medium-sized bottles leaving three fourths of each bottle empty. Pour one-cup vinegar in each of the bottles. The vegetables must be immersed completely in vinegar. Stir gently every day with a dry spoon, for the next four to five days.
  9. By the sixth day the pickle will be just right to eat.

This sounds really good. I would have trouble with the metric measurements, however.

My grandmother used to make homemade sweet pickles by adding sugar to a jar of dill ones in the fridge. You flip the jar every day and add a little more sugar. They're done in about a week or so. So good!:)

pickles love it, you don't like food today have pickle use it, it is as simple, it goes with anything anytime for me

half kg = 1.102 lb (for first two) rest are in spoons and cups. Hope that helps :)
